Indonesia's northern cuisine
Gayatri pays tribute to the traditional cuisine of her native Bali with recipes that show respect for the past, albeit from a new perspective.
Bali will be a feature of Worldcanic in Ayu Gayatri's cookery, and she will be showing us the recipes, spices, ingredients and aromas of rich, voluptuous cookery still in the hands of generations and generations of female chefs.
She will be doing this with two typical and completely different recipes. Bebek Betutu, which used to be one of the dishes the royal family served up for its distinguished guests, and also for cultural ceremonies (due to the rich spices and the delicate traditional cooking process); and Mujair Nyatnyat, a recipe typical of the high or mountainous areas of Bali, such as Kintamani, near Mount Batur.
